Mixed rice with tuna and vegetables ツナと野菜の混ぜごはん

By adding plenty of vegetables and utilizing cumin seeds, this mixed rice dish is put together with the image of a warm salad. Because the ingredients are prepared separately, there are fewer cooking errors and the recipe is easy to make deliciously even when using packaged rice.

How to cook

Simply mix cooked white rice with the sautéed ingredients for a delectable rice dish. This dish also goes well with potatoes and sweet potatoes, which become sweeter when steamed, as well as celery. Salmon flakes may be substituted for tuna for a delicious finish. If substituting salmon, omit the soy sauce from the seasonings to account for the salmon’s saltiness, and prepare the ingredients.

2 cans (70 g/2.5 oz cans used)
canned tuna (packed in oil or water)

dried kombu (kelp)

If using packaged rice, omit Steps 1 and 4 and heat up the rice as indicated on the package.

Cooking Steps

Wash the rice

Place the uncooked rice in a bowl and pour in plenty of water. Rinse the rice, changing the water about 3 times while gently mixing with a whisk. Then soak the rice in water for 1 hour.

Substituting white rice with brown rice makes the finished dish even easier to eat. Soak overnight or longer if brown rice is used.

Prepare the ingredients

Peel and cut asparagus into small pieces. Remove the stems and seeds from the bell pepper and dice. Drain the sweet corn and set it aside. Remove green soybeans from their pods.

Sauté the vegetables

Place 2 cans of tuna with its liquid in a frying pan. Add seasonings and cumin seeds and cook over medium heat until all liquid is absorbed (a generous amount of cumin seeds is recommended). Cook off the liquid thoroughly, as the rice will become soggy if there is any liquid left.

Cook the rice

Drain soaking water, add white rice, water and dried kombu in a pot and heat over high heat without a lid. When it begins to boil, stir once with a wooden spoon to break up the rice, cover the pot with a lid and reduce heat to low, then simmer for 7 minutes.

Steam

Turn off the heat, remove the dried kombu, quickly transfer the cooked tuna and chopped vegetables from Step 3 to the pot, cover again, and steam for 7 minutes.

Finishing

Roughly mix all ingredients together and serve. If using packaged rice, mix the heated rice (microwaved as indicated) and ingredients in a large bowl before serving.
