Rice Flour Baumkuchen 米粉のバウムクーヘン

How to cook

Cook it on low heat, as the batter contains sugar and burns easily.

Ingredients For 1 cake

100 g (3.53 oz)
Rice flour (for baking)
1
Egg
2 tbsp
Refined sugar
130 cc (4.40 fl oz)
Milk
1/2 tsp
Baking powder
1 tbsp
Rice-bran oil *Can be substituted with other oil.

Cooking steps

About 30 minutes

Mix the egg and sugar

Add the egg and refined sugar to a bowl and mix well with a whisk.

Add milk

Add the milk to the bowl in 1 and mix.

Add powders

Add the rice flour and baking powder to the bowl in 2 and mix.

Add rice-bran oil and mix

Add the rice-bran oil to the bowl in 3 and mix.

Prepare a rolled omelet pan

Heat some rice-bran oil (amount not in the ingredients list) in a rolled omelet pan and wipe it off with a paper towel.
*You can also use a regular frying pan.

Pour in the batter

Pour in a thin layer of batter and place a core made of aluminum foil at the far end.

Roll the batter

When the batter starts to boil, roll it from the back to the front of the pan.

Add more batter and roll

Move the batter to the back of the pan, add some more cooking oil, pour in some more batter and spread it across the pan. Roll the batter the same way as (7) and repeat these steps until you have used all the batter.

Pull out the core and cut

Gently pull out the aluminum foil core and cut the cake into easy to eat pieces.
